Ingredients:
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 cup Kalamata olives, pitted
- 200g feta cheese, crumbled
- 1/4 cup Sunmare extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large salad bowl, combine cherry tomatoes, diced cucumber, diced red and yellow bell peppers, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.
- In a small bowl, whisk together Sunmare extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing.
- Pour the dressing over the salad and toss gently to coat the ingredients evenly.
- Let the Mediterranean salad sit for a few minutes to allow the flavors to meld.
- Garnish with freshly chopped parsley before serving.
