Olive Oil Braised Scarlet Runner Beans

Barbunya Pilaki (Olive Oil Braised Scarlet Runner Beans) recipe:

Ingredients:

  • 500 grams fresh scarlet runner beans
  • 1/2 cup Sunmare Extra Virgin Olive Oil
  • 1 onion
  • 1 medium-sized potato
  • 1 carrot
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 1 tomato
  • Parsley
  • 2-3 cloves garlic
  • Salt

  1. Start by placing the scarlet runner beans in a pot and add enough water to cover them. Boil for about 10 minutes, then strain the water (let the beans cook but avoid overcooking to prevent them from falling apart).
  2. Meanwhile, finely chop the onions and begin cooking them in a pot with half a cup of water.
  3. Once the onions are softened, add Sunmare Extra Virgin Olive Oil, followed by tomato paste, diced tomatoes, finely cubed potatoes, thinly sliced carrots, and finely chopped garlic.
  4. After sautéing for about 2 minutes, add sugar, salt, and 1 cup of boiling water. Cook the potatoes and carrots for about 10 minutes.
  5. Then, add the scarlet runner beans and check the water level. If it has reduced significantly, you can add a bit more boiling water.
  6. Simmer with the lid on and on low heat until the potatoes and carrots are cooked. Remember to check the water level to prevent sticking to the bottom of the pot.
  7. Once the dish is cooked, remove it from the heat, and you can serve it after it cools.

Note: You can preferably add sprinkle chopped parsley on top. Serve with a slice of lemon if desired.
